Preparation time:5-7 minutes 

Pickling Time: minimum :2 hours , maximum 24 hours 

Ingredients: 

  • 4-6 fresh cucumbers, 
  • 1/4 cup  salt 
  • 1 tablespoon  granulated sugar 
  • 1/2 cup white vinegar 
  • 1/4 cup water 
  •  1 tsp whole black peppercorns
  •  1/4 tsp red pepper flakes (optional, for some heat)
  • 1/2 teaspoon mustard seeds

 Instructions:

 Sliced into 1/4-inch thick or Slice the cucumber in half lengthwise, then cut in half.
 In a large bowl, combine cucumber slices and salt. Let it sit for 30 minutes to draw out excess water. 
 Rinse cucumber slices with fresh water to remove excess salt.
In a saucepan, combine sugar, vinegar, water, Black peppercorns, 
 red pepper flakes, mustard powder.
Bring to a boil over medium heat, stirring until sugar dissolves. 
Off the stove.
Pack cucumber slices into a clean glass jar or container with a tight-fitting lid. 
Pour the hot pickling liquid over the cucumbers, ensuring they're completely covered the slices. 
 Seal the jar and let it cool to room temperature. 
Store it in the refrigerator.
 Allow the pickles to chill for at least 24 hours before serving. The longer they sit, the tangier they'll become. 

 Variations:

 Sweet pickles cucumber:
To make sweet pickle cucumbers  reduce the vinegar to 1/8 cup and add 1/4 cup more sugar.  
Spicy pickles cucumber:
 For Make Spicy pickle increase the red pepper flakes to 1/2 tsp or more.
Dill and cucumber pickle:
To make the dill and cucumber pickle add 2 tablespoons of dill.

Tips:

  • Make sure when add pickles in jar, the jar is clean and boil the empty jar before use to prevent fungus.The spoon used for scooping the pickle should be clean and dry, so that the pickle is protected from mold.
  • Use wooden spoon.Always close with air tight lid the jar or container pickle well after use.
  • This pickle flavor is best for a week after which it should not be used.
