Mac and cheese is the super simplest recipe, made with macaroni , white sauce and cheese mixture, also adding some spices such as paprika powder, black pepper powder, Oregano, mustard powder, lemon zest, breadcrumbs for top crispy layer, I add spicy potatoes crispy chips on top layer with bread crumbs, that develop super delicious taste,and bake.

How to Cook the Mac and cheese:

1.Cook the Pasta :

Ingredients :

  • 2 cups of elbow macaroni
  • 4 cups of water (for boiling macaroni )
  • 1 teaspoon oil
  • 1 teaspoon salt.

□ Directions for cooking macaroni :

Take a saucepan, pour  4 cup of water in it, add 1 teaspoon of cooking oil and 1 tablespoon of salt. 
Place a pot of water over high heat.when water is boiled, add the macaroni in boiling water and cook it not too soft(90% cooked).
Drain the macaroni and set aside.

2.How to Make the Sauce :

  • 1 cup grated sharp cheddar cheese
  • 1 cup mozzarella cheese
  • ½ cup Parmesan cheese
  • 4 tbsp butter
  • ¼ all purpose flour
  • 1 litre Full cream milk
  • 1 cloves of garlic
  • ½ teaspoons mustard powder
  • ½ teaspoons paprika powder
  • 1 pinch of red chilli flakes
  • ½ teaspoons salt
  • ½ teaspoons lemon zest(optional )
  • 1 teaspoon chicken powder(optional )
  • Freshly ground black pepper
  • ½ teaspoons Oregano
  • 1/4 cup bread crumbs 
  • 1 packet spicy potatoes crispy chips

□ Direction for making the white sauce:

Melt unsalted butter in a saucepan over medium heat.
Add finely chopped garlic and sauté it.
Whisk in butter and flour to make a roux, cook until fragrant, now gradually add the full cream milk, whisking the mixture continuously to make a smooth sauce, add the spices mustard powder, Oregano and black pepper,  the sauce is ready.

□ How layering the mac and cheese:

  • Crushed the spicy crispy potato chips.
  • Grated the cheese. (reserve ½ cup grated cheese for topping).
  • Grease the baking dish,add the layer of macaroni, next the layer of prepared white sauce, a layer of grated cheese,repeat the process of layering,Top with the remaining cheese and layer of bread crumbs, you can crushed potatoes (spicy crispy chips) for more delicious and spicy taste.

□ How to Bake the mac and cheese:

  • Set the oven temperature at at 350°F
  • Bake the macaroni and cheese mixture, until the cheese is melted and the edges are crispy and the colour turns light golden brown for approximately 20 minutes.
  • sprinkle it with fresh parsley/ cilantro,pinch of black pepper and oregano, pinch of red chilli flakes, lemon zest optional. 
  • Delicious spicy Mac and cheese is ready to eat immediately.
