Ingredients:
- 1 kg Mince beef /mutton
- 2 tablespoons onion paste
- 1/ 2 cup Fried Onion
- 2 tablespoons Ginger garlic paste
- 1/2 cup cilantro (chopped )
- 1 teaspoon mint leaves (chopped )
- 1 tablespoon green chilli paste
- 1 teaspoon Raw papaya paste

How to make seekh kebab masala :

- Whole Spices
- 1 tbsp coriander seeds
- 10 round dried red pepper
- 1 tsp black peppercorns
- 1 tsp cumin seeds
- ½ cinnamon stick
- 2 mace
- 1 bay leaf
- 1 tsp kabab cheeni
- 1 teaspoon cloves
- 4 anise star
- 2 black cardamom seeds
- 2 long pepper peepli
- Powdered spices
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- ½ tsp Garam Masala powder
- ½ teaspoon Ajeenomoto
- salt to taste
Instructions:
Dry roast all the whole spices including the black cardamom seeds.Grind it until they are powdered form.
After grinding all the dry spices, filter them in a sieve.
Take it out in a bowl, and now add in the salt, and all the powdered spice.
Mix well!
Directions for making perfact seekh kebab:
Mix the minced meat and fat and grind it finely. Now add the garlic, ginger, minced onion, ground onion, papaya and all the spices and grind it again. Now keep the kebab mixture in the fridge for two hours. Now take about 55 grams of minced mixture in a skewer and prepare the kebabs and cook them on coals. While roasting the kebabs, apply oil with the help of a brush. When the kebabs are golden brown and cooked well, leave the skewers to cool for a while. Tips :
- Select minced meat with extra fats added to further enhance the flavour and for softness.
- If you use papaya as tenderizer select hard papaya, do not use raw papaya green in colour, that is not good for health, use Papaya should be raw but yellow in color.
- Squeeze lemon juice during roasted to enhance the flavour.
- leave the skewers to cool for a while, to keep kebab breaking.
