Ingredients:

  • 1 pound boneless, skinless chicken
  • 1 cup or 250g penne pasta
  • 2 tablespoons or30g unsalted butter
  • 1 tablespoon all purpose flour
  • 2 cloves garlic, minced
  • 1 cup or 250ml heavy cream
  • 1/2 cup or 120g grated Parmesan cheese
  • 1/2 cup or 60g grated mozzarella cheese
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions:

Boil the penne pasta in a pan, add oil and lemon juice and lemon zest. Cook until penne pasta al dente, drain the pasta with the help of a strainer, reserve 1 cup drained water of pasta and set aside the penne pasta.
In a large skillet, add a teaspoon of cooking oil, add the butter and melt butter over medium heat. Add garlic and sauté it.
Add chicken and cook until browned and cooked through (5-6 minutes).
Remove chicken from skillet and set aside.
In the same skillet, add the all purpose flour, cook it low medium heat until fragrant, add ½ cup of full cream milk, boiled the milk, add heavy cream and bring to a simmer.
Reduce cream by half.
Stir in Parmesan and mozzarella cheese until melted and smooth.
Add cooked pasta, chicken, and basil to the skillet. Toss to combine.
Season with salt and white pepper to taste.
Serve hot, garnished with parsley if desired and lemon wedges.
