  • 1/4 cup granulated sugar

  • 16 ounces 450g cream cheese, softened
  • 1/2 cup powder sugar
  • large eggs, separated
  • 1 teaspoon vanilla extract
  • 1 cup 240g sour cream
  • 1 cup 120g mascarpone cheese or substitutionsGreek Yogurt
  • 1 cup 120g espresso or strong brewed coffee
  • 1 cup 120g whipping cream Cocoa powder or powdered sugar for dusting.

INSTRUCTIONS:


Preheat your oven to 325°F 165°C.

PREPARE THE CRUST:


Crush the lady finger with the help of a food processor, mix the crushed ladyfingers.

Mix sugar, and melted butter in a bowl until well combined with the help of spatula.

Grease the cake pan, line the parchment paper, press the mixture into the bottom of a 9-inch 23cm springform pan.

Bake for 10-12 minutes or until lightly browned on a preheated oven. Let cool completely,

PREPARE THE CHEESECAKE:


☆In a large mixing bowl, beat the cream cheese until smooth. Add the granulated sugar and beat until combined to make a fluffy texture.

☆Separate egg white and egg yolks, Beat egg white and egg yolks and mix together, one at a time, followed by the vanilla extract.
