Ingredients:
For the Crust:- 1 1/2 cups graham cracker crumbs
- 2 tablespoons cocoa powder
- 1/4 cup granulated sugar
- 6 tablespoons (84g) unsalted butter, melted
For the Cheesecake:
- 16 ounces (450g) cream cheese, softened
- 1/2 cup granulated sugar
- 4 large eggs, separated
- 1 teaspoon vanilla extract
- 1 cup sour cream
For the Cherry Topping:
- 1 cup cherry preserves
- 1 cup fresh or frozen cherries,
- 1 tablespoon cornstarch
- 1 tablespoon granulated sugar
- 2-tablespoon cheery syrup
For the Whipped Cream:
- 1 cup heavy cream
- 2 tablespoons granulated sugar

- First we make graham Crackers crumbs, to make the crumbs grind the crackers until they turn into a crumb, it just takes one minute only.take crumbs into a medium bowl,add granulated sugar, cocoa powder and butter mixture well.
- Grease the 9 inch springform with oil, dust it with flour, line the parchment paper, now transfer the mixture into springform, press the mixture and evenly with the help of spatula spread all sides of the springform cook it to Preheat the oven to 325°F ,165°C. Bake for 10 minutes, then set aside to cool.

In a small pan add sugar,and fresh cherries cooked until soft, mesh them , remove the seeds, add cornstarch dissolves in cheery syrup over medium heat, until thick.

- In a large mixing bowl, beat cream cheese with electric beater until form asmooth texture .
- Gradually add granulated sugar and beat until combined into the mixture.Beat eggs and mix with it, add sour cream, stir it to mixed .
- Pour cheesecake batter into the prepared pan over the crust.
- Add cherries toppings.
BAKE THE CHEESECAKE:
1. Bake for 55-60 minutes or until the edges are set and the center is slightly jiggly.ĺeave it in pan until cool down.Allow the cheesecake to cool completely in the pan.
ASSEMBLE THE CHEESECAKE:
Release the springform pan sides and transfer the cheesecake to a serving plate.

- Spread whipped cream all around the cake.
- Melt chocolate, spread the melted chocolate on a smooth surface, wscrape it with a scraper to make curls.
- Make flowers on cake, fill cream in a piping bag, use nozzle to make flowers, and place glazed cherries on it.
