Ingredients:
For the meat marination:
- 500g boneless, skinless chicken or lamb,
- 1/4 cup olive oil
- 2-3 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon sumac,
- ½ teaspoon cinnamon
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- Salt and pepper, to taste
- tahini sauce as required
- Chilli sauce as required
- Mayonnaise shawarma sauce as required
- For the assembly:
- 4-6 pita breads
- Chopped vegetables (tomatoes, onions, cucumbers, bell peppers)
- Pickle(cucumbers pickle ), as required
Instructions:
Marinate the meat:
In a large bowl, whisk together olive oil, garlic, lemon juice, paprika, cumin, coriander, sumac, cinnamon, and chilli flakes salt, and pepper well and mix them. Add the sliced meat, the meat coated with the spices. Cover the meat and refrigerate for at least 2 hours or overnight, so the meat completely absorbs the spices and aromatics.
2. Grill the meat:
Preheat an oven grill or grill pan on the top of the stove to medium-high heat.
Remove the meat from the excess marinade and cook for 7-10 minutes per side, or until the meat is properly cooked, the colour of meat turn brown off the stove or oven, take the meat on to cutting board and cut into thin strips,and take aside it.
Spread a layer of tahini sauce and chilli sauce on the pocket of each pita bread, followed by a lettuce, a few slices of meat, some chopped vegetables, and pickles (if using for more increase the taste ), drizzle the mayonnaise sauce for shawarma. the delicious Shawarma ready to serve.
Make sure the meat is properly cooked and tender.
Add sumac or amba sauce to the meat marinade for extra flavour.
Add feta cheese or olives to the assembling for extra flavour.
